Hi Steph, Your recipe looks delicious! I've made a recipe given to me by a friend for Corn Casserole using Jiffy Corn Muffin Mix and now I can't wait to try a from scratch recipe. I wondered if I was using the wrong size cans of corn since I use the same size cans you use and the Jiffy site calls for 8-3/4 or 8-1/4 oz. size cans.
